Peat Foam Eggs Directions ?
Two eggs into a bowl and whisk well, thigh meat into a slightly coarse meat mixture, add cooking wine, pepper and salt and marinate for ten minutes
Pour off the excess water in the meat mixture, and then pour the meat mixture into the egg mixture, add a little salt and water starch, and whisk well with chopsticks
Put a moderate amount of oil into a pan, shake the pan to coat the bottom of the pan, and then turn the heat down and pour in a small amount of oil until the oil is about 40% hot. When the oil reaches 40%, turn down the heat and add the egg mixture, let the egg mixture spread evenly all over the pan
Least heat all the way, when the egg mixture on the surface is about to solidify, sprinkle with chopped green onion, and then carefully turn the egg over and fry for another half minute. Note: If you're worried about the scallions getting blackened after frying, you can leave them out
