Here are the steps to make one of my roasted ribs:
1. Prepare the raw materials: ribs, ginger, green onion, cumin powder, chili powder, black pepper, oyster sauce, soy sauce, salt, chicken essence, sugar and cooking wine.
2. Wash the ribs, put them in a basin and soak them for 1 hour to remove the blood.
3. Wash and cut the scallions into pieces, peel and wash the ginger and slice.
4. Put appropriate amount of chili powder and cumin powder into a small bowl and mix well.
5. Soak the ribs, clean and put them in a bowl, add the scallion segments and ginger slices, then add the marinade.
6. Add oyster sauce, soy sauce, salt, chicken essence, sugar and cooking wine, scrub well with your hands, cover with plastic wrap and refrigerate for more than 3 hours.
7. Line a baking tray with tinfoil and preheat the oven to 220 degrees Celsius, top and bottom.
8. Place the baking sheet in the preheated oven and bake for 20 minutes.
9. Turn the ribs over, brush with the marinade for the ribs, brush and place back in the oven for another 20 minutes.
