1. Ingredients: 500 grams of beef, 15 grams of wine, 15 grams of light soy sauce, 8 grams of sugar, 5 grams of black pepper, and appropriate amount of sauce.
2. After blanching and washing the beef, cut the beef into skewers of the same size. Then soak it in warm water for 2 hours. The purpose of this is to soak away the blood, and then keep the beef and mutton as moist as possible to maintain the tenderness of the beef in the skewers.
