1. Spring pancake
A kind of food that northerners eat at the vernal equinox is called spring cake.
2 The so-called spring cake is to spread flour into a thin dough, then shred all kinds of fresh vegetables such as shredded cucumber, shredded carrot, scallion and broccoli, add a thin layer of egg skin, and add sauce to shred pork and wrap it in flour cake, which is called spring cake.
Eating spring cakes at the vernal equinox is a traditional diet in the north. Eating spring cakes can be smooth all year round. This is also the yearning for a better life.
Step 2: spring bamboo shoots
1. Spring bamboo shoots are called the freshest. In the past, there were no bamboo shoots and vegetable leaf nets in the north, but with the development of economy now, bamboo shoots from the south have also entered the northern market;
So now northerners have the habit of eating bamboo shoots at the vernal equinox.
③ Stir-fry the spring bamboo shoots and shredded pork together, or add the unique sauerkraut in the north, or chop it up to make jiaozi with spring bamboo shoots.
Step 3 stew
(1) the northeast stew is very famous, so in the more important vernal equinox for China people, stew is indispensable.
② Among the traditional stews, stewed pork with vermicelli, stewed chicken with mushrooms, stewed goose in iron pot and pork-killing dishes are all very classic northeast stews.
So at the vernal equinox, these traditional stews naturally come to the table.
4. Toona sinensis buds
(1) Toona sinensis bud is not a fresh vegetable that can be eaten all year round, but a fresh vegetable unique to the vernal equinox. It's the sprout of Toona sinensis leaves on Toona sinensis trees.
② At this time, the buds of Toona sinensis are very tender. Scrambled eggs or pies are very delicious. If you miss this season, you will have to wait another year.
(3) So when it comes to the vernal equinox, North Renye Fang likes to buy some Chinese toon buds for cooking.
Six customs of north vernal equinox
1. Brewing
Shanxi has the custom of making wine at the vernal equinox. "Wenshui County Records" records: "Spring Equinox, wine mixed with vinegar, flowers."
② Lingchuan, Shanxi, not only brewed wine at the vernal equinox, but also sacrificed wine and vinegar to the ancestors, praying for a bumper harvest. Brewing vernal equinox wine is a popular custom in Shanxi, Beijing, Tianjin, Hebei, Shandong, Zhejiang and other places.
2. Eat spring vegetables
① There is a non-holiday custom in Lingnan Vernal Equinox called "eating spring vegetables". "Spring vegetable" is a kind of wild amaranth, and the villagers call it "Chunbi".
On the vernal equinox, all the villagers went to pick spring vegetables. When looking in the field, I often see a tender green, thin and slender, about a palm long. Spring vegetable picking is generally a fish fillet "rolling soup", which is called "spring soup".
People think: "Spring soup tonifies the dirty, clears the liver and intestines, and makes the whole family healthy." Since spring, I have prayed for the peace and health of my family.
3. Vertical eggs
The vernal equinox "vernal equinox" is one of the more interesting holiday customs. On the vernal equinox, people usually choose a smooth and symmetrical fresh egg of four or five days old and carefully erect it on the table.
Although it is difficult for eggs to erect, many people have tried to succeed. According to historical records, the tradition of separating eggs in spring originated in China more than 4,000 years ago. People celebrate the arrival of spring with this, so there is a saying that "the vernal equinox is here and the eggs are beautiful".
Step 4 stick to the bird's mouth
In some places, on the vernal equinox, every household should eat glutinous rice balls according to the custom, and cook more than a dozen twenty or thirty glutinous rice balls that don't need to be packed. Thin bamboo sticks are worn on outdoor ridges.
Step 5 sacrifice every day
Emperors in history have a ritual system of offering sacrifices to the sun in spring and the moon in autumn. The vernal equinox of the Zhou Emperor was a sacrifice to the sun altar. The Book of Rites says: "Altar Day." Kong Yingda wrote: "Also known as the vernal equinox." Pan Rongbi's "Jingshi Jisheng" in the Qing Dynasty also recorded: "The vernal equinox sacrifices the sun and the autumn equinox sacrifices the moon, which are the grand ceremonies of the country, and literati are not allowed to worship."
6. Spring Society
Spring Club is an ancient activity of offering sacrifices to the gods of the earth. It is the first day of the Zhou Dynasty, and it is mostly held on the fifth day after beginning of spring. Before the Han dynasty, there were only spring clubs. After the Han Dynasty, there were two spring and autumn festivals, which were held around the vernal equinox and the autumnal equinox. Yan Shu, a poet in the Northern Song Dynasty, wrote in his poem "Breaking the True Son" that "Swallows come to the New Society, Lihua lags behind the Qingming Festival", which can prove the approximate time of the Spring Festival Society.
