You cannot eat dead turtles. Because turtle meat contains a lot of histidine, which is an important component with a special umami taste, it can produce histamine after it is decomposed. Histamine is a strong straight dilator, which can cause the release of a series of allergic substances. When the concentration is too high, it can cause symptoms such as collapse and shock. After death, the soft-shell turtle meat can decompose on its own to produce histamine. If people eat the dead soft-shell turtle, it will cause food poisoning.
So soft-shelled turtles must be killed fresh. To identify the freshness of a live turtle, turn the turtle upside down on a table. Turtles that can turn over quickly are of the best quality, and vice versa.
Squid should not be eaten with peaches, amaranth, eggs, pork, rabbit meat, mint, celery, duck eggs, duck meat, mustard, chicken, eels, and crabs.
