After washing the small yellow croaker, add salt, thirteen spices, white sugar, cooking wine, soy sauce and onion ginger, and marinate in the refrigerator 1-2 hours to taste. In the case of limited time, at least marinate for 15 minutes.
2. Relax the oil in the pan and turn to medium heat. While waiting for the oil temperature to rise, spread flour evenly on both sides of each small yellow croaker.
3. When the oil temperature is 80% hot, put the small yellow croaker in one by one and turn it gently with chopsticks to avoid adhesion and uneven coloring.
4. After frying until it becomes slightly discolored, remove it with a colander.
5. When the oil temperature rises to 80% heat again, add small yellow croaker and fry it again. Deep-fry until golden and crisp, and remove the oil control.
