Homemade Peanut Brittle
Delicious peanut brittle, is my personal favorite a small snack, the ingredients and practices are relatively simple, vegetable oil version of the peanut brittle, the same crunchy and delicious.

I use the Changdi 52-liter oven, the recipe is good for 22 peanut brittle, each about 20 to 25 grams, you can adjust the amount according to the size of the individual oven.

Materials

Low-gluten flour 200g

Corn oil 100g

Sugar 60g

Cooked peanut kernels (peeled) 70g

Eggs (only 24g for the peanut brittle, keep the rest of the egg wash for brushing the surface)

Baking powder 2g

Baking soda 1g

Black sesame seeds 1g

How to make peanut brittle

Prepare all the ingredients.

Cooked peanut kernels (peeled) with a rolling pin and set aside.

The thickness of the peanut kernels is according to personal taste, I rolled them thicker so that they are chewy and have a good texture.

Remember to reserve some of the egg wash in advance to brush the surface of the peanut brittle. Pour the egg wash (about 24g), corn oil and sugar into a large bowl.

Mix well.

Sift in the gluten flour, baking powder and baking soda.

Stir to form a ball, no need to over mix or you will have gluten and the peanut brittle will not be crunchy.

Pour in the chopped cooked peanuts.

Stir to form a ball.

Take a small piece of dough and put it in the center of your hand, use both hands to roll the dough into a small ball, each weighing about 20 to 25 grams.

Line a baking sheet with silicone paper and place the balls on the sheet, pressing down gently with your index finger.

Flatten the balls into small round cakes.

When all the dough balls are done, place them on the baking sheet, spacing them apart.

The egg wash that you set aside earlier will come in handy.

Brush each surface evenly with the egg wash.

Sprinkle some black sesame seeds on the surface. (

Preheat the oven at 170 degrees for 10 minutes. Place the baking sheet in the center of the oven and bake at 170 degrees for 20 minutes. The oven temperature is different, it is recommended that the last five minutes do not leave, check at any time, the surface of the golden brown color can be.

Baked peanut brittle can not be eaten immediately, removed from the natural cooling will be crisp.
