Mostly distant sea fish, which can be bought in seaside towns but are actually not much available even in seaside towns.
Sharks are usually sold more often, occasionally big tuna and tuna, followed by whales, sailfish is less
These fish are actually caught or sold as fish, after all, a big shark only 3 fins, a dorsal fin and two pectoral fins, small sharks are usually sold half or whole, the fins are not chopped down. And actually fresh shark fins are not expensive, and fish meat a price, 10-15 dollars a pound, expensive are those advanced dried fins. They don't sell the oil from the whales either.
The ones who sell whale oil are professional whalers who catch whales before stripping them of their oil to sell them, and general fishing boats catch whales and sell them for meat as well
