1. 2. Chop pork spare ribs into pieces and wash them. Soak in clean water for 1-2 hours, changing water 1-2 times halfway through.
Soaking is to remove blood water. If there is more blood, you can blanch the ribs. Ribs I buy when I let the meat stall boss with people's big knife chopped well, their own home that knife does not stand up to chopping.
3. Wash the ribs, drain the water, add 1-2 spoons of cooking wine, scratched well.
4. Prepare marinade: pear half, green onion, ginger and garlic (dosage as shown in the picture, a little more garlic, will be more fragrant), black pepper, chili sauce, oyster sauce, soy sauce, olive oil, a little sugar.
5. Onion, ginger and garlic are chopped, add the ribs.
6. Rub the pear into pear paste and add to the ribs.
7. Add 1 tablespoon of oyster sauce, 1 tablespoon of chili sauce, moderate soy sauce, a little salt and sugar, black pepper, mix well.
The sauces are salty, so don't put too much salt.
8. Place in the refrigerator to chill and marinate overnight.
In order to make it easier to turn the ribs halfway through so that they are evenly flavored, I used a plastic bag for the ribs, with the mouth of the bag tied tightly. My opinion, the ribs marinate for a minimum of 12 hours or more, this wait will not make you regret.
9.? Preheat the oven, 200 degrees. Remove the marinated ribs, add 1 tbsp of olive oil, mix well and place the ribs evenly in a baking dish.
I was too lazy to wash the baking sheet, so I put a layer of tinfoil on it first.
10. Drizzle with the extra marinade from the bag, cover with a piece of tinfoil, and bake at 200 degrees Celsius for 30 minutes or until the ribs are cooked through.
To this step can already end. At this point, the ribs are tender and juicy, but if you're looking for a better flavor, move on to the next step. I prefer the skin to be dry and flavorful.
11. Place the cooked ribs on a baking sheet and continue to roast in the oven for six or seven minutes, until the juices on the surface run clear.
The sauce will drip off, so line the grill with tinfoil to make it easier to clean (use the same tinfoil you used to cover them in step 10).
12. Remove the ribs from the baking sheet in step 10, there is still a lot of marinade left in the baking sheet, so you can thinly slice the root vegetables or potatoes, lay them out, and bake them in the oven.
