Practice: a pan-fried horse mackerel
1. horse mackerel dry, cleaned and cut about 1 cm thick piece of warm water soaked for about 20 minutes.
2. Hot pan drop 75mls of oil to medium-high temperature. Wipe the fish dry, place one piece in the pan and fry over a high heat for 1 minute, then reduce the heat to a low simmer and fry until nicely browned, then turn around and fry in the same way.
3. Drizzle a small amount of water from the edge of the pan to prevent the fish from losing too much water. Add the ginger, dry the surface and serve.
