Method 1: disembowelment method
Put the live loach in a deeper bucket, pour hot water to scald the loach directly to death. The hot water scalded loach is very good to deal with, because the outer layer of mucus has become solidified protein, with a gentle hand scraping can be torn off. Then cut open the belly of the loach, remove the viscera of the loach, and rinse it with water to prepare dishes.
Method 2: complete kill method
Since the loach is basically a treasure all over the body, there are many people who prefer the complete kill method, but before that, the loach must be allowed to spit out the mud and sand.
It is to put the loach in clean water, drop a few drops of vegetable oil or one or two cut chili peppers, so that the loach can quickly spit out the mud. You can change the clean water once or twice in between to see that it no longer becomes cloudy. If you like to use live loach in your dishes, it's now ready to use.
The most classic dish made with live loach is loach drilled tofu.
If you prefer to use killed loach to make dishes, you can fish out the loach that has spat out all the mud and sand and put it in a clean bucket, and then use the following two methods to condemn the loach to death --
1, pour hot water to scald it to death, and then scrape off the outer layer of white protein layer, and then rinse it off.
2, every 500 grams of loach sprinkled into the 5 to 8 grams of salt, salt immediately after the lid of the bucket cover, about 20 minutes or so, and so that there is no sound in the bucket can be. By salting, it also allows the loach to continue to spit out all the dirt in the stomach, and the layer of mucus on the outside is easy to deal with.
