The method of stir-fried mutton with green onions is as follows:
Materials: appropriate amount of mutton slices, green onions, ginger, salt, white pepper, soy sauce, cooking wine, starch, sesame oil, sugar.
1. Slice the mutton, clean it, squeeze out the water, add salt and white pepper and marinate for 10 minutes to add flavor. Pour other seasonings into the bowl and stir evenly, and set aside.
2. Wash the green onions and cut them into oblique sections. Add a little oil to the pot, stir-fry the green onions first, then remove and set aside.
3. Sprinkle a little dry starch on the meat slices and mix well.
4. Re-heat the pot, stir-fry the shredded ginger. When the oil is hot and smoke comes out, pour in the mutton slices and stir-fry quickly over high heat.
5. When the color of the meat slices changes from red to white, add the green onions.
6. Pour in the bowl of juice, stir-fry quickly, and immediately turn off the heat and remove from the pan. The mutton will be fragrant and not smelly.
