"Guangqun Fangpu" says: 'Northerners use it for daily supply, and farmers think of it as a tool to protect themselves from the winter.' ". This shows that at that time, farmers in the north and Chengde used buckwheat as their main food crop. Lu You, a poet from the Song Dynasty, once wrote a poem about the prosperity of buckwheat: "The buckwheat is long on the mountain road, and the pods are separated from the leaf."
In the Erxianju area, Wang Laosan, who is known as the "Wantuo King", is the best at Wantuo. He has been making bowl dumplings since the late Qing Dynasty. The bowl dumplings he makes are made from carefully selected ingredients, new techniques, fried thoroughly, and the utensils are also very elegant. During the Republic of China, he was summoned by Tang Yulin, the governor of Rehe, to the governor's mansion to teach the art of making bowls and lumps. After his death, the craft was passed down by his descendants. Until now, Erxianju's Wantuo is still very popular with domestic and foreign tourists.
