Practice of Sichuan-style home-cooked pepper chicken
Cooked chicken, don't overcook it, cool it in ice water and cut it into pieces for later use.
Shred the onion, not too finely, and divide it into two parts.
Chili noodles are also divided into two parts.
The fresh Chili noodles smell delicious. My aunt went to the vegetable market three times for this pepper. I can't buy such fresh food when I cook it myself, so I use dried peppers to cool and make noodles.
Rapeseed oil is burned to smoke, and half of the Chili noodles are poured in.
Boiled chicken soup, put a bowl out and season with salt and sugar. Then add chopped green onion and Chili oil spilled in the previous step. This step is the most important. Whether it is delicious or not depends mostly on the proportion of sugar and salt in this soup.
Pour in the chopped chicken.
Stir well and sprinkle with the other half of onion.
