1. A section of fresh lotus root, peeled and sliced thinly.
2. Boil water in a pot, turn off the heat, put in the lotus root slices and smother for a while, strain the paddle juice.
3. Take a small bowl, soy sauce, vinegar, salt, sugar, cornstarch and mix well to make the sauce.
4. Heat oil in a pan. Pour in the lotus root slices and stir fry evenly. Pour in the sweet and sour sauce. Stir fry evenly. Sprinkle in chopped green onion, mix well, out of the pan.
Tip: Lotus root slices into the boiling water smothered for a while and then poured out, the purpose is to remove some of the starch of the lotus root slices.
