A mussel crossing the bridge means a seafood mussel. It can cross the bridge like a human. The elephant mussel is not the elephant mussel that is only the size of a baby's fist, which often appears in food stalls and barbecue stalls, but refers to the "giant" elephant mussel-Pacific diving mud clam, which is as thick as an arm and shaped like a trunk, which often appears in Cantonese seafood winemakers.
Elephant mussel:
The scientific name is the Pacific Submerged Mudclam Panopea abrupta. The two shells are equal in size, about 18-23cm long, thin and brittle, and the front end has a thick siphon, which is the part of the elephant mussel that we usually eat.
at present, most of the mussels used in many high-end seafood restaurants are Canadian mussels, so we also invited Mr. Grant Dovey, executive director of the Canadian mussel association, and Ms. Katie Lindsay, marketing specialist of the Canadian mussel association, to introduce them to you.
