Tiger skin chicken feet
Ingredients
Chicken feet, ginger slices, garlic, dried chili peppers, cooking wine, light soy sauce, dark soy sauce, oyster sauce, white pepper , Dougu spicy sauce, sesame oil, white vinegar, honey.
Method
1. Wash the chicken feet, cut off the nails, and then cut the chicken feet into two halves;
2. Put water in the pot , pour in the chicken feet, add ginger slices and cooking wine, boil for 2 minutes and remove;
3. Rinse the chicken feet to remove the floating residue and drain the water (it is best to spread it out and let the water dry );
4. Mix white vinegar and honey water and brush it evenly on the chicken feet. You can brush it repeatedly two or three times to form a crispy skin during frying;
5. Pour oil into the pot, and when it is 50% to 60% hot, carefully add the chicken feet and fry them;
6. Prepare a bowl of cold boiled water, preferably add some ice cubes, and fry the chicken feet into golden brown Remove and drain the oil, then quickly soak in cold water to soften and swell;
7. After soaking the chicken feet for 2 hours, remove them and put them in a steamer to steam for 15 minutes;
8. You can prepare seasonings during steaming: mix minced garlic, dried chili pepper segments, light soy sauce, dark soy sauce, oyster sauce, white pepper, Dougu spicy sauce, and sesame oil;
9. Pour the mixed seasonings onto the steamed chicken feet, mix the chicken feet and seasonings evenly while they are hot, and then steam them in the steamer for 20 minutes
