Broken meat ≠ Inferior meat
According to the processing method, steak can be divided into "original cut steak" and "reconstructed steak". The so-called original cut steak refers to the whole tenderloin and beef tenderloin that are directly cut and packaged without any pretreatment, which belongs to raw meat. Recombined steak, also known as spliced steak, is a kind of conditioned meat product processed by meat reorganization technology.
Meat recombination technology is an important means of meat processing and conditioning. With the aid of recombination technology, not only the utilization rate of minced meat can be improved, but also the product types of meat products can be enriched. However, the minced meat produced in the process of meat cutting or dressing is not equal to inferior meat. However, if it is not marked according to the regulations, or mixed with non-edible ingredients, it is illegal and belongs to commercial fraud.
Carrageenan should be used as needed.
Carrageenan is a kind of food additive, which is the general name of polysaccharide extracted from natural plants such as marine red algae (including carrageenan, Eucheuma, Taxodium ascendens and Sedum). Carrageenan, as a hydrophilic colloid, can reduce the water loss during meat processing.
