Then put it in a bowl and add vinegar. It depends on how much vinegar is needed for the meat. About 1 to 2 spoons of vinegar is enough for one pound of meat. Stir well with your hands and wait for 10 minutes before setting aside. Vinegar can decompose oil, fat and remove the smell of meat (it can deodorize meat that is not very fresh), making the meat tender, soft and delicious.
Then boil the water. Add a little more water at one time, because the water will be reduced by 1/3 after the stew is finished. It is not recommended to add cold water in the middle. If you are a novice, you will make mistakes. How much water should you use? If you're not good at it, you can only add hot water once. If you're good at it, you don't have to add it. You can put the meat in when the water is still boiling. Do not add the meat after it is boiled. The meat will be hard in this way. After the meat is boiled, use a spoon to scrape off the layer of oil and dirty foam floating on the top. , then you can add salt and ginger slices. It would be better if you add a few slices of lemon. If not, leave it alone. Add the ingredients and accessories you want to add, and you can continue to simmer. Bring a little wine to a boil and bring it to a boil for 10 minutes, then turn to low heat and continue to simmer for 40 minutes. That's pretty much it. If you want a faster method cook it in a pressure cooker. The method is almost the same.
