1. Use a knife to gently scrape off the outer skin of the matsutake mushrooms. Cut off the roots. Try not to wash with water.
2. After processing, select a few matsutake mushrooms and cut them into slices, not too thin. Wrap the rest in towels and paper towels and freeze.
3. Then put the three-yellow chicken into the pot under cold water. After the water boils, take it out for three minutes and rinse away the blood foam and impurities.
4. Put the three-yellow chicken and ginger slices into the soup pot and simmer for 1 hour. Add the sliced ??matsutake mushrooms and continue simmering for about 1 and a half hours. Do not add salt during the entire soup making process.
