The first course: (Red dates, lotus seeds and white fungus soup)
First, we soak the lotus seeds and white fungus in water for 10 minutes. Remove the hard knots at the roots of the white fungus and tear it into small pieces, and remove the bitter core of the lotus seeds. Then put the prepared red dates, lotus seeds, and white fungus into the soup pot. Pour in water, prepare a few grains of rock sugar, put it in together, cover with a lid and bring to a boil over high heat, then reduce to low heat and simmer for 30 minutes. Bring to a boil over low heat, open the lid and stir, add the wolfberries and cook again.
The second course: (Carp soup with shredded radish)
First prepare a piece of ginger and 1 white radish, cut them into shreds. Prepare two more clean crucian carps and make a slash near the thick part of the back. Then prepare a small bowl, add onion and ginger, and squeeze out the onion and ginger juice. Then apply it evenly on the fish, inside and out, add some ingredients and marinate for 10 minutes. Heat oil in a pan and fry the crucian carp until golden brown on both sides, add shredded ginger, add an appropriate amount of boiling water and simmer for 12 minutes. Remember not to use cold water. Then blanch the radish in boiling water, add appropriate amount of salt and pepper after 12 minutes, then add shredded radish and simmer for 4 to 5 minutes.
Third course: (Papaya and Pork Ribs Soup)
First prepare a papaya, clean it, peel off the skin, cut it in half, dig out the black seeds inside, and then cut it into small pieces blocks. Blanch the pork ribs in a pot under cold water, add a spoonful of cooking wine to remove the fishy smell and increase the freshness. Blanch for about 3 to 4 minutes, take out the float and rinse it with clean water. Then prepare a casserole, pour the ribs, red dates, and ginger into the pot, add an appropriate amount of water, cover and simmer for about 15 minutes. After 15 minutes, pour the wooden claws into the pot and continue to simmer for 10 minutes, then add an appropriate amount of edible salt and cooking oil and serve.
Course 4: (Angelica mutton soup)
First, soak the angelica in water, prepare a slice of ginger, and prepare a few red dates to remove the core. Put the clean mutton into a pot of cold water and blanch it. After boiling the blood foam, take it out and clean it. Then put it into a casserole with a little more water. After boiling over high heat, add angelica, red dates and ginger. Cover the lid and simmer over low heat for 2 hours. After 2 hours, open the lid and add a little wolfberry and cook for another 5 minutes.
