Shiitake Mushroom Stewed Chicken Step-by-Step

Dry shiitake mushrooms soak in warm water 2 hours in advance and set aside.

One high-quality old hen, cleaned and chopped into large pieces. A high-quality hen is the key to better soup and chicken flavor. Ordinary chicken can't produce that flavor!
