Ingredients: fingered citron, carrot, onion, salt, sugar, balsamic vinegar, pepper and Chili oil, sesame oil.
(1) Wash the fingered citron, carrot and onion, cut them into filaments, and chop the garlic cloves into pieces.
(2) Pour salt 1 teaspoon into the shredded fingered citron, and marinate it with your hands. After waiting for 10 minutes, some water will brake out, pour it out and rinse it with cold boiled water.
(3) Add shredded carrots and onion.
(4) Add chopped garlic, salt 1/4 teaspoon, pepper and chilli oil 1 teaspoon, sesame oil 1 teaspoon, sugar 1/4 teaspoon and balsamic vinegar 1 teaspoon, and stir well.
2. Stir-fried bergamot
Ingredients: bergamot 1 piece, red pepper 1 piece, onion and ginger, salt, monosodium glutamate and soy sauce.
(1) Cut the red pepper and shred the onion and ginger.
(2) Wash and cut off the two ends of the bergamot, slice it first, and then cut it into silk.
(3) Pour a little cooking oil into the oil pan, heat it to 70%, and saute chives, ginger and red pepper rings.

3. Fried Chaenomeles with Shrimp Skin
Ingredients: shrimp skin, fingered citron, garlic.
(1) Peel and slice the bergamot.

4. Scrambled eggs with shredded fingered citron
Ingredients: 200 grams of bergamot, 2 eggs, proper amount of oil, salt, chopped green onion, vinegar and soy sauce.
(1) Pour the eggs into a bowl and break them up.
(2) Peel and seed the bergamot, and then shred it.
(3) Put a little oil in the pot, heat it to 70% by high fire, and add chopped green onion to smell.
(4) Pour in the egg liquid and fry until cooked, then add the shredded bergamot and stir-fry for a while.

5. Stir-fried shrimp with bergamot
Ingredients: bergamot 1 piece, shrimp100g, appropriate amount of oil, salt, cooking wine, oyster sauce, auricularia auricula, fermented beans and onion.
(1) Marinate the shrimps with cooking wine, salt and oyster sauce.
(2) Wash, peel, remove seeds and slice the bergamot.
(3) Put a little oil in the pot, heat it to 70%, pour in the marinated shrimps, stir-fry and take it out for later use.
(4) Put the oil in the pot and stir-fry the lobster sauce.
(5) Add bergamot and black fungus, and then add some salt and boiled water.
(6) After the bergamot is cooked, add the shrimps, add some oyster sauce and stir well.
(7) Sprinkle chopped green onion and serve.
