One boiled chicken thigh
One boiled chicken wing
One small piece of chicken breast
One or two slices of Chinese cabbage
One small handful of hanging noodles
One piece of scallion
Method of how to make Shredded Chicken Noodles in Soup for one person ?
First, pick out the chicken thigh meat, chicken wing meat and chicken breast meat with chopsticks. Because the chicken has been boiled in chicken broth so the meat is very loose, you can basically get it off with a touch. Then you can just mash it with chopsticks and it will be shredded.
Shred the cabbage and chop the green onions. Separate the white and green onions.
Throw the chicken bones into cold water and boil. If there is chicken oil saved from skimming the chicken soup the day before scoop a small piece and throw it into the soup. Put some white onion down. There are black fungus in the pot because it was in the chicken soup I was stewing. When the water boils turn down the heat and cook for how long? About ten minutes or so. If it's in the morning, you can cook the soup to go wash up on the side hahaha.
Put down the hanging noodles and cook for five minutes. I usually crack the egg down as well when I put down the noodles so that I can cook my favorite kind of egg (pictured). If you prefer a looser texture, cook for a shorter time. When the noodles are about two minutes away from being done, add the shredded cabbage to the pot.
After the noodles are done cooking, serve the noodles and soup. Discard the chicken bones. Yard to the noodles with shredded chicken and raw green onion green. Sprinkle salt, sugar, moderate white pepper, a few drops of sesame oil, and it's done!
