Ingredients for cold shredded carrot: 1 carrot, 5 cloves of garlic, 3 dried peppers, 1 tablespoon of soy sauce, 3 tablespoons of balsamic vinegar, 1 tablespoon of sesame oil, 1 tablespoon of sugar, 5 grams of cooking oil, 5 grams of edible salt, 2 grams of pepper, 2 grams of chicken essence and 1 onion.
Methods and steps of making
Step 1: Peel carrots, slice them, shred them, add 5g of salt and marinate for 30min.
Step 2: Chop garlic, chop dried peppers and cut shallots.
Step 3: Drain the salted water from the carrot, wash the salt in it with clear water, squeeze out the water, put it in a bowl, add garlic and dried peppers, and pour the hot oil.
Step 4: Add a proper amount of salt, a spoonful of sugar, a spoonful of soy sauce, three spoonfuls of balsamic vinegar, a spoonful of sesame oil, a proper amount of pepper and chicken essence, and add the onion.

Tip: If you have white sesame seeds and coriander at home, you can put some in moderation, which will taste more delicious. Cold-mixed shredded carrot, I didn't blanch it, and the mixed shredded carrot tastes particularly crisp.
