I. Main Ingredients
Skykyo rakkyo (roots and beards removed) 800g
II. Side Ingredients
Salt 24g
Brown Sugar 120g
White Sugar 120g
Sweet and Sour Shallots 120g
Soya Soy Sauce 24g
Cooled Boiled Water 500g
Skyo rakkyo in Sweet and Sour Sauce How to make rakkyo ?
Remove the roots and shallots.
Wash and drain.
Cure with salt for more than 3 hours.
Put white sugar and brown sugar in a container.
Put vinegar and soy sauce.
Put rakkyo and cold boiled water (just water not over rakkyo).
Turn slightly with oil-free chopsticks.
Cover and store in refrigerator.
Take out and turn once a day, soak for 5~7 days to taste and serve.
