Is there a difference between microbial starter and raw starter?
Daqu is a microorganism that can produce glucoamylase or germinate grains. Microbial Daqu is a microorganism of Aspergillus cultivated with nutrients such as rice, wheat and bran. It is different from the koji of grain germination (such as barley malt). Raw koji is a kind of koji used for raw material brewing, which is mostly composed of simple saccharifying enzyme and active dry yeast. It is another classification of koji according to the characteristics of raw materials (raw and cooked).
