Method 1:
Ingredients: 10 duck eggs, 150g salt, 50ml white wine, 1000ml water, fennel, pepper
Steps:
1. Wash 10 raw duck eggs and dry them. Take a dry jar and put the dried duck eggs in it.
2. Put 150g salt, 1000ml water, appropriate amount of fennel and Sichuan peppercorns in the pot, bring to a boil over high heat and stir evenly.
3. Let cool and then pour into the jar with duck eggs. The salt water should just cover the duck eggs. Then add 50ml of white wine and seal the jar.
4. After 30 days, take out the duck eggs, add water and boil them for 20 minutes before eating.
Method 2:
Ingredients: 200g salt, 2000ML hot water, 10 fresh duck eggs, 100ML white wine
Spice: 10g green pepper, cinnamon 10 grams, 10 grams of aniseed, 10 dried chili peppers, 10 bay leaves
Steps:
1. Pour the spices and salt into the container for soaking the eggs, and pour in 2000ML hot water, stir with chopsticks until the salt melts.
2. Wait until the hot five-spice water has cooled completely, then pour in 100ML white wine.
3. Clean the duck eggs, dry them with a cloth, and soak them in spiced salt water.
4. Cover with several layers of plastic wrap, tie it with a rope, and put it in a cool place for 1 month.
