Ingredients for Braised Jinchang Fish
1 piece of Jinchang Fish, a piece of ginger
3 green onions, a little salt
2 tablespoons of fish sauce cooking wine 2 tablespoons
Oyster sauce 2 tablespoons chicken powder a little
Pepper a little light soy sauce 2 tablespoons

Wash the green onions and cut the heads and leaves separately. As shown in the picture

Use a knife to cut open the abdomen of the fish, take out the internal organs and gills, remove the black peritoneum, wash and drain the water.

Make a few cuts on both sides of the fish to absorb the flavor, apply salt and sprinkle with pepper.

Put the fish on a plate, pour the cooking wine, and stuff the fish belly with chopped onion and ginger slices. Sprinkle some ginger and green onion on the surface and marinate for about 20 minutes

Heat oil in a pot, remove the ginger and green onion on the surface of the fish, put it in the pot and fry over medium heat system.

When both sides are browned, sprinkle with green onions and shredded ginger.

Pour in the fish sauce, oyster sauce, light soy sauce, chicken powder, and a little water.

Cover the pot and simmer for about 10 minutes until the sauce dries up.

Put the fish into a basin, pour the remaining sauce on top, sprinkle with chopped green onion and serve.
Cooking Tips for Braised Jinchang Fish
Fry the fish slowly over medium-low heat and do not rush. Fry both sides until browned and then simmer for about 10 minutes. If you fry the fish in a hurry, the skin will not remain intact and the flavor will not penetrate deep into it.
