Method/Steps
Peel the winter melon, wash and cut into pieces.
Cut the corn into sections and wash.
Wash the scallions and cut them into sections, leaving the scallions white. Wash and slice the ginger. Set aside the peppercorns and star anise.
Put the spareribs (bought and chopped) into a pot with cold water until the water covers the ribs, then boil the water and blanch.
Take out the ribs and wash them. Pour off the foamy water in the pot and wash the pot.
Add enough water to the pot at one time, put in the blanched and washed spareribs, add green onions, ginger, peppercorns, and star anise (to improve freshness and remove fishy smell), and simmer for half an hour.
