The method of soaking Madou is as follows:
Preparation materials: 2 pounds of soybeans, 1 pound of fresh Sichuan peppercorns, 1 piece of ginger, appropriate amount of salt, appropriate amount of mineral water, and a few drops of white wine.
1. Soak the soybeans in water for four hours in advance.
2. Wash the fresh peppercorns, dry them and set aside.
3. Prepare a large bottle of mineral water. If there is no mineral water, you can also use cold boiled water.
4. After the water boils, put the soybeans in the pot and cook for 2 minutes. Do not cook them for a long time. If they are cooked for a long time, the soybeans will not be crispy when soaked. It's the kind of noodles that don't taste good.
5. Pick up the cooked soybeans for it.
6. Then use cold water to cool it quickly, making sure to let it cool thoroughly.
7. Control the moisture, then pour an appropriate amount of cold boiled water or mineral water to remove the bacteria in the cold water. You can also control the moisture directly, spread it out, and let the moisture dry.
8. Control dry moisture.
9. Use kitchen paper towels to dry the water on the surface of the soybeans.
10. Pour the processed soybeans into a large basin, add fresh peppercorns, shredded ginger, and an appropriate amount of salt. Just add a little more salt than usual for cooking. If it's too salty, it will go bad and stink! It's too salty, bitter, and unpalatable.
11. Stir evenly and you will be able to smell the numbing smell of fresh peppercorns.
12. At the bottom of an oil-free and water-free glass bottle, first put a little fresh Sichuan peppercorns. When eating, the Sichuan peppercorns are at the bottom and the soybeans are on top for easy access.
13. Put the mixed soybeans into a glass bottle.
14. Pour in an appropriate amount of mineral water. The mineral water should cover all the soybeans. If there is no mineral water, you can also use cold boiled water to soak hemp.
15. Add a few drops of white wine to add flavor and prevent the Madou raw white flowers from deteriorating.
