Hot noodles also do not need to wake up, and the only difference between the dead noodles and hot noodles is that you need to use boiling water to mix the noodles. First, pour the flour into a bowl, add freshly boiled water to it, stirring as you add it, and then knead the dough after the flour has cooled. The characteristic of hot noodles is that the food is sticky, and it is also troublesome to handle, and it is easy to stick to your hands. The hot noodles are used to make the sugar cakes sold outside, which are soft and tasty, with a crispy exterior and a tender interior, while hot noodles are seldom used to make home-made pasta.
So the three kinds of flour are fundamentally different, the taste is completely different, we should choose the way to mix the noodle according to the cuisine we are making.
