The steps for pickling ginger are as follows:
Select medium-sized, white ginger and clean it well. Cut the ginger into thin slices and pickle in salt water overnight. The next day take out the slices of ginger, rinse them with water and dry them. Stir fry in a pan with appropriate amount of oil. Add the appropriate amount of soy sauce, salt and other seasonings, add the appropriate amount of water, bring to a boil and allow to cool.
Put the dried ginger slices into a glass bottle and seal the bottle and place it in a cool and ventilated place to marinate for a week before serving.
