Enoki mushrooms scrambled eggs
Ingredients
Enoki mushrooms, eggs 3 pieces, appropriate amount of salt, salad oil
Method
1. Remove the roots of the enoki mushrooms, wash them, drain them and cut them into segments.
2. Crack the eggs into the bowl and stir evenly. Pour in a little more salt. (MM who likes chili pepper can also add a little chili powder)
3. Add oil to the pan, and when the oil is hot, pour in the enoki mushrooms.
4. Stir-fry for about 3 minutes and add a little salt.
5. Pour in the eggs, mix the enoki mushrooms and the eggs well, and wait until the eggs are cooked before serving.
Stir-fried bacon with Zheergen

Ingredients
200g Houttuynia cordata, 150g bacon, 7 dried chilies, 2 cloves garlic, 2 green garlic (called garlic sprouts in the south), 2 teaspoons soy sauce (10ml), 1/3 teaspoon salt (2g), 1/3 teaspoon chicken essence (2g), 1 tablespoon oil (15ml)
Method
Rinse the bacon with warm water. Place in a steamer and steam over high heat for 20 minutes, then take out and let cool slightly, then cut into thin slices and set aside.
First fold the ear roots into small sections about 4cm long, then put them into clean water and wash them repeatedly with both hands to remove the fibrous roots at the joints.
Break the dried chilies into small pieces. Slice garlic. Wash the green garlic, peel off the skin, and cut into 3cm long oblique sections.
Heat the oil in the wok over medium heat. When it is 50% hot, add the bacon slices and stir-fry until the edges are slightly curled and the fat is transparent. Take it out and set aside.
Reserve the oil in the wok, heat it again, add small sections of dried chili pepper, green garlic sections and garlic slices, add salt and stir-fry until fragrant.
Finally, add small pieces of folded ear root and bacon slices into the pot, add soy sauce and chicken essence, and continue to stir-fry for about 3 minutes.
Sauteed Oyster Mushrooms
Ingredients
400 grams of Oyster Mushrooms.
Method
