Ingredients ?
Peeled and steamed purple potatoes 300g
Tapioca flour 150g
Tapioca milk 250ml
Sugar 160g
Water 100ml
Shredded coconut 120g
Salt
How to make purple potatoes and coconut cake ?
Take a small pot and boil the water and sugar together until the sugar dissolves, set aside to cool

Purple potatoes peeled and steamed soft (I used 200g of purple potatoes and 100g of sweet potatoes. (Please note that the weight is 300g after steaming)
Put the softened purple potatoes in a blender with the sugar water and puree it

Then put in the coconut milk and tapioca flour. Blend well until smooth

Pour into a greased steamer tray. Then steam on high heat for 35 minutes or until done. Remove and allow to cool completely, then slice with a knife

Mix the fresh shredded coconut and a pinch of salt, and steam for 5 minutes. Remove from the steamer and dip the sliced purple potatoes into the shredded coconut evenly. You can also put it in the refrigerator, it tastes good when iced
