material
50g of green bristlegrass, 40g of gentleman, 300g of small intestine, rice wine 1 bottle and 3000㏄ of water.
working methods
1. Wash the green bristlegrass and gentleman, and wash the small intestine and cut it into sections for later use.
2. Boil the green bristlegrass, gentleman and water with high fire, then turn to low heat and cook for another 30 minutes. After filtering, add the small intestine and rice wine and cook for another 30 minutes until the small intestine is crisp and rotten.
working methods
1 Turn the pig's small intestine upside down with chopsticks, put it into a large bowl, add baking soda, scrape and knead the pig's small intestine with baking soda, rinse off the baking soda with warm water, add baking soda, continue scraping and kneading, and rinse with warm water until the dirt on the intestinal wall is cleaned.
2 Cut the pig's small intestine into a 30cm long section, tie one end tightly, add peanuts, and tie two knots in a 6-7cm long section (except one knot at both ends of the small intestine to cut it into small pieces from the middle) until the whole casing is filled.
Soak the beans all night in advance. Put the pig small intestine with soaked beans and peanuts into a pressure cooker, add ginger, white pepper and salt, cover the pot and steam for about 30 minutes, then turn off the heat. After serving, cut it into small pieces where the small intestine is knotted, which is convenient for eating.
