Steamed Vermicelli with Shredded White Radish

Ingredients: 1 white radish, 1 vermicelli, 2 teaspoons of soy sauce (10ml), 1 teaspoon of dark soy sauce (5ml), 1/2 teaspoon of salt (3 grams), 1/2 teaspoon of chicken broth (3 grams), 5 red chili peppers, 4 slices of green onion, 1 star anise

How to make it:

1) Wash the vermicelli, and soak it in boiling water. After soaking, cut into 10cm long sections, drain and set aside. Peel and wash white radish, cut into thin julienne.

2) Pour oil into the frying pan, when the oil is slightly hot, put the red pepper, scallion slices and star anise. When the red chili peppers turn a little color, pour in the shredded white radish and stir-fry.

3) Pour in soy sauce, dark soy sauce and salt and stir-fry for 2 minutes, so that the color of the soy sauce adheres evenly to the shredded radish. Then pour the vermicelli over the shredded radish (don't let the vermicelli stick to the wall of the pot so as not to paste the pot), pour a small amount of boiling water, cover and simmer for 5 minutes, then open the lid and mix in the chicken broth, stir-fry for a few times to get out of the pot.
