First Steps
Stir the yeast and the baking powder with water at about 30 degrees Celsius for 3 minutes or so, until it melts. Then pour it into 1Kg of flour and add the right amount of water to mix the flour into a dough. Knead the dough until it is smooth and the bowl is smooth and flourless and then put the lid on. Top with a quilt and ferment for 3 to 4 hours to about 1.5 times the original volume

Wash and blanch the mushrooms; and dice the seaweed, carrots, and blanched mushrooms, and use your hands to clench the water out of the vegetables.

Soak chicken in water for 10 minutes and rinse well, drain and dice, add fresh green onion and mince. Add a pinch of salt and mix well clockwise.

Heat the oil and put the peppercorns into the pot, until the peppercorns are fragrant and completely black. Then fish out the cooked peppercorns and throw them away. Pour the domestic oil into the chicken after it cools and stir well.

Steam for 15 minutes on high heat, then turn to medium heat for 10 minutes and low heat for 5 minutes. When the buns are about to come out of the cage, remember not to lift the lid immediately, but wait 12 minutes before lifting the lid.
