If the skin of potato is green and germinates, it is mainly solanine produced in the blue bud of potato. This toxin is soluble in water and is not resistant to high temperature. Therefore, in addition to cutting off the buds visible to the naked eye, potatoes with buds should be peeled or cut into small pieces and soaked in cold water for more than half an hour to dissolve the residual toxins in water.
When cooking, high temperature, boiling or frying can further destroy toxins. Finally, we add some vinegar, so that the toxin is difficult to control.
preventive measure
1. Potato poisoning mostly occurs in spring and early summer, because spring is humid and warm, and poor preservation of potatoes is easy to cause germination. Therefore, strengthening the storage of potatoes and preventing germination are the fundamental guarantee to prevent poisoning.
2. It is forbidden to eat sprouted potatoes with blue flesh.
3. For a small number of potatoes that have germinated and not deteriorated, the sprouted eyes can be completely dug out, the blue part of the pulp can be cut off, and then soaked in cold water for 30 to 60 minutes to dissolve the residual toxins in the water, and then cleaned.
