Step 2: Pour the minced meat into a big bowl and start seasoning. Pour a spoonful of soy sauce, oyster sauce, sesame oil, a spoonful of salt, chicken essence, white sugar and a proper amount of thirteen spices into a bowl, then beat an egg and mix well by hand.
Step 3: Cut a proper amount of ginger slices and scallion into a bowl in advance, pour in 80g warm water, stir evenly and soak for 20min, pour scallion and ginger water into the meat stuffing three times, stir evenly by hand each time, so that the meat stuffing can fully absorb scallion and Jiang Shui, and then stir until the meat stuffing is thick. Use salt instead of shrimp oil.
Step 9: Bring the pot to boil water, and put the water into the wrapped wonton to cook. The water is basically cooked in 3 minutes. Stir with a shovel to prevent sticking together.
