Shiitake mushroom and eggplant diced noodles
Ingredients required: 1 large handful of shiitake mushrooms, 1 eggplant, 1 egg, noodles (for 3 people), 1 packet of sweet noodle sauce.
Ingredients: 3 bay leaves, 1 small handful of Sichuan peppercorns, 1 aniseed, 2 spoons of soybean paste, 3 spoons of light soy sauce, 2 spoons of oyster sauce, appropriate amount of salt and chicken essence.
The first step: wash the eggplant and shiitake mushrooms, peel the eggplant, cut into thick slices and then cut into dices with a knife. Remove the roots of the shiitake mushrooms and cut into dices the same size as the eggplant. Fry and stir-fry the eggs. Crushed and set aside.
Step 2: Pour a wide amount of oil into the pot. When the oil is hot, add 3 bay leaves, 1 small handful of peppercorns, and 1 aniseed. Stir over low heat until the aroma is released and remove. (Eggplant is more oil-absorbent, so the amount of oil needs to be about twice that of usual cooking to make the topping delicious)
Step 3: Pour in the diced eggplant and stir-fry until it turns slightly brown. When soft, add diced mushrooms and continue stir-frying.
Step 4: After the mushrooms are fragrant, pour in 2 tablespoons of sweet noodle sauce and 2 tablespoons of soybean paste. The amount of sauce depends on the amount of mushrooms and eggplant. Generally, the sauce can fully wrap the diced mushrooms and eggplant. Just diced eggplants are enough. After adding the sauce, you need to stir-fry constantly to prevent the sauce from burning.
Step 5: After the sauce is stir-fried, add chopped scrambled eggs, 3 tablespoons of light soy sauce, 2 tablespoons of oyster sauce, appropriate amount of salt and chicken essence, and stir evenly until the seasoning is completely melted into the sauce.
Step 6: Finally add water that has not covered the ingredients, turn to high heat to reduce the sauce. When collecting the juice, be careful not to be too thin or too thick. As long as the sauce is in this sticky state, pour it in Mix it with the noodles that have been cooked in advance. The sauce is rich and fragrant and can be eaten by one person in two bowls.
