Taihu crab, also known as crab, grows in Taihu Lake waters. Its back shell is hard, long and concave, and its abdomen is bluish black. There is an umbilical cord under its abdomen, one male and one female, with bristles inside. Crabs are migratory animals. Every autumn and winter, when the gonads of the second-year-old crabs mature, they flock down the river to the shallow sea where the river meets the sea and reproduce for life. In the early summer of the following year, the hatched crab seedlings went upstream again and returned to Taihu Lake to settle down. After molting many times, they gradually grow up and become big crabs the next year. After 1949, it was difficult for crab seedlings to migrate because of damming along the river. Since 1966, artificial exile of crab seedlings has begun, and 1 kg of crab seedlings can produce 3-4 tons of crabs.
"Autumn wind tickles crabs", and cold dew arrives in beginning of winter, which is the season when Taihu crabs are on the market in large quantities. The ancient poem says that "September is the end of navel and October is the tip, and drinking chrysanthemums is the day", and there is also a folk proverb of "nine women and ten men".
Taihu crab is heavy, thick yellow, tender and beautiful. Traditional eating methods include steaming, boiling, Lamian Noodles, drunkenness and pickling. After the crab meat is taken out, it can also be made into famous dishes such as lion's head with crab meat, peacock shrimp and crab, crab oil crystal ball, fried crab powder and crab powder steamed buns. As the saying goes: "Crabs taste tasteless when served on the table. Taihu crab is delicious and has high nutritional value.
