How to make chicken meatballs
Ingredients: 300 grams of chicken breast, 100 grams of yam, 5 grams of starch, 1 tablespoon of light soy sauce, 2 grams of sugar, appropriate amount of salt, a little sesame oil, green vegetables Just the right amount.
Steps:
1. Peel the yam and cut into small pieces. When peeling yam, put a plastic bag or disposable gloves on your hands to prevent the yam from sticking to the skin.
2. Clean the chicken breasts, add cooking wine and soak in water for 10 minutes to remove the fishy smell. After 10 minutes, rinse off the cooking wine ingredients with water to control the water, and cut the chicken into small pieces.
3. Put the yam pieces and chicken pieces together in a food processor, add 1 tablespoon of light soy sauce, 1 gram of salt, and 2 grams of white sugar (white sugar is used to enhance freshness), and grind into a puree. Use a food processor to knead things with a certain amount of moisture. Put the moist ingredients of the yam pieces at the bottom and the slightly dry ingredients on top. If you have a meat grinder at home, it will be more convenient to use the meat grinder directly.
4. The stirred yam and chicken puree is smooth and moist, take it out and put it into a bowl.
5. Boil water in a soup pot, put the yam and chicken puree on the side of the pot, and put a small bowl of cold water on the side. You can use a knife to cut into thin slices, or you can squeeze it into balls with your hands and slice with a knife. When cutting, dip each piece into clean water to prevent sticking.
6. When even small bubbles appear on the bottom of the soup pot, turn the heat to the minimum, put the chicken slices or chicken balls into the water, and when all is done, turn to high heat to simmer the soup until all the meatballs float to the surface. It will be ready in a minute or two and the chicken will be cooked very well. If you cook it for too long, the chicken will become stale. Once cooked, add salt to taste.
7. Take some washed vegetables that are cooked with the soup, put them into the pot and blanch them until cooked, then pour in a little sesame oil, then turn off the heat and take out the pot. The vegetables used with the soup, such as baby spinach, chrysanthemum, rapeseed, baby cabbage, etc., are all good. Delicious chicken meatballs are ready.
