Ingredients: beef 500g, rock sugar 1 teaspoon, tomato sauce 1 teaspoon, soy sauce 1 teaspoon, and salt 2 teaspoons.
Accessories: half onion, star anise, cinnamon, fragrant leaves, dried tangerine peel, fennel, dried Chili, garlic cloves, ginger slices and chives.
Steps:
1. Cut the beef into small pieces, soak it in clear water for about 5 hours, and change the water every hour.
2. Put the soaked beef into the pot with cold water, heat it until it boils and bleeds, then wash it and drain it for later use.
3. Prepare ingredients, dice onions and collect all kinds of ingredients for later use.
4. Take a large pot, hot pot cold oil, add all the ingredients except shallots, stir-fry for fragrance.
5. Add the rock sugar and continue to stir fry until the rock sugar melts, then add the bean paste, tomato sauce and chives and stir fry to give a fragrance.
6. Pour in the drained beef, stir-fry evenly, then add soy sauce and stir-fry until the beef changes color.
7. Pour the right amount of water, which is about 2/3 of the pot full. Heat the fire until it boils, and simmer for about 2 hours. Add some salt to the stewed beef soup to taste.
8. Take out a proper amount of soup as the noodle soup head, add the cooked noodles to the beef soup, and add a proper amount of beef to make a bowl of braised beef noodles.
