Main and auxiliary ingredients: needlefish, onion, ginger and garlic.

Wash the needlefish and cut into sections.

Heat oil in a pan, add onion, ginger and garlic and saute until fragrant.

Add fish segments.

Cook in vinegar and cooking wine.

Add light soy sauce and then add appropriate amount of water.

Bring to a boil over high heat and add salt and sugar to taste. Simmer over low heat for about 10 minutes.

Add MSG for freshness, then turn off the heat.
9.
Remove from the pot and plate.

The head of the needlefish has less edible content and can be discarded.
