Ingredients: Young mugwort leaves, ginger
1) Pick off the tender tips of mugwort, soak them in salt and baking soda water for half an hour, rinse and filter out the water.
2) Cut the ginger into 2mm-sized pieces. This time I cut it into larger pieces.
3) Put the washed ginger shreds and mugwort leaves into a steamer and steam for 5 minutes.
4) After steaming, let it cool and squeeze out excess water. If it is too wet, subsequent operations will take a long time.
5) In a larger iron pot, remove the oil and clean it, add shredded ginger. Use your hands or a food-grade rubber spatula to fry the shredded ginger over low heat until it shrinks by half, then add moxa leaves with excess water removed.
6) Just like how Suzhou people fry green tea, stir-fry evenly over low heat.
7) When the shredded ginger and mugwort leaves are as dry as new tea, you can pour them out, wait for them to cool down and put them in a bottle for later use...
Experience: mugwort leaves cannot be steamed for a long time. Otherwise the iron pan will stick to the pan. This time, because I didn't handle the water well, it took me nearly 2 hours to complete the frying. When frying, as long as your hands don't touch the bottom of the pot directly, it doesn't feel too hot and is acceptable.
Fried tea is a hard job, and my hands and waist ended up with soreness... Nothing is easy.
