The production process is as follows:
Ingredients: prunes, pork belly, ginger slices, scallions, pepper, star anise, dark soy sauce, light soy sauce, and white sugar.
1. 4 pounds of pork belly, washed and cut into cubes. Soak in water, and soak the prunes at the same time. Onion, ginger, and pepper aniseed ingredients are set aside.
2. Put the pork belly in a pot with cold water until the water is slightly more than the pork belly. Add the peppercorns and aniseed and cook. Boil the water, add onion and ginger, and skim off the foam. Turn to low heat and simmer for 30-40 minutes (don't take longer, as it will fall apart and break easily if it's too cooked and difficult to cut). Just enough that the chopsticks can pierce through. fish out.
3. Brush all the dark soy sauce, let it cool and set aside (if you brush the meat, keep the remaining dark soy sauce for later use and do not throw it away).
4. Wash the prunes, squeeze out the water and chop slightly. Minced green onion and ginger. Set aside. Chopped prunes, minced green onion and ginger, brush the pork belly with dark soy sauce and set aside. Find a small basin or large plate and pour a little of the stew broth into it and set aside.
5. Heat the pan, pour oil, turn to low heat, fry the pork belly skin side down, cover the lid, cover it, cook on low heat for three to five minutes, then put it into the prepared meat dish. Soup in a small basin.
6. After everything is fried, use the remaining oil in the pot to stir-fry the scallions and ginger, add a small amount of soy sauce, a small amount of salt, and an appropriate amount of sugar. Stir well and turn off the heat and set aside.
7. Cut the soaked meat into slices according to the texture of the meat (crosswise cut beef and sheep, vertical cut pigs). Just make sure the sides of the cut meat are smooth. After everything is cut, add light soy sauce. Add dark soy sauce. Appropriate amount of sugar. Mix well and marinate for half an hour. Arrange the meat slices one by one with the skin side down and put them into the bowl.
8. Put the fried prunes into bowls and press them tightly. Do not waste the remaining soy sauce after brushing the meat and pour it into bowls. The broth used to soak the pork skin is also poured into bowls separately. Place in steamer. Turn water to medium heat and time for 60 minutes. Sprinkle the soup that has just been poured out. If you are good at it, you can also put it on the plate and pour it directly onto the bowl.
