I won’t dazzle you with the compounds of chocolate or the ratios of cocoa butter to cocoa butter in different brands of chocolate. I've also heard (from French people or people who have been to France) that there are no decent chocolate brands in the US. I have never had French chocolate and this is my opinion, the chocolate I use when baking tastes the best.
I love a delicious chocolate chip cookie, homemade brownies or a cake made with Ghirardelli chocolate. If you've never had these candies, I recommend giving them a try first. The chocolate they sell contains a whopping 90% cocoa, which I've never eaten, but I stir in it as "unsweetened" chocolate. Available in bittersweet, semi-sweet, milk and white, these bite-sized treats are much better than Nestle or Hershey's. You spend more money on the name on the bag than on the quality. Nestle and Hershey's fries are grainy, while Ghirardelli's fries are smooth and creamy.
Two years ago for Christmas, I made a batch of DoubleTree by Hilton cookies (the last time I baked cookies for the holidays) and used three varieties of Ghirardelli chips (bitter, milk, and White), everyone who has tried it says it is the best biscuit they have ever tasted. My guy doesn't bullshit me just to make me feel good. If it tastes like shit, they tell me because there are three things I "cannot tolerate" and they are liars, thieves and liars.
All I can say is try different brands. Ghirardelli is the best for me, I'm not saying I won't use other brands when they are on sale. The batter is the most important thing, use quality ingredients. I would never use regular chocolate in baked goods or enjoy! brand. I want people to enjoy my baking and not live in fear of eating it. Haha! Baking brings me joy and it brings joy to others. All these years I have brought you nothing but pain. It's a way for me to make amends for the past, because there are people, places and things that I can't make up for directly, so I make up for it by making other people happy.
I know everyone has their own opinion on the quality of chocolate and everyone has different tastes. This is just my opinion and I have a lot of people who would agree with the satisfied look on their face. Everyone has their own hobbies
