Peach jelly How to make cheesecake (super detailed)

First make the cookie base by pouring digestive cookies into a whisk bowl and mashing them with the end of a rolling pin.

Melt the butter over hot water and pour it into the cookie crumbs, mixing well with a spatula.

Pour the cookies into an 8-inch cake mold and press with a spatula to flatten the cookies.

To make the frozen cheese, dissolve the fish glue in cold water.

Beat the cream cheese with an electric mixer under hot water.

Add the sugar to the mixture and beat until smooth.

Pour in the egg yolks and beat well.

Squeeze in the lemon juice and mix well.

Add the sour cream and mix well.

Pour the milk and light cream together in a saucepan and heat until a little hot.

Soak the dissolved fish glue to melt into liquid form over hot water, I for the sake of speed is to put the bowl in the pot over hot water to melt.

Melted fish glue liquid into the milk mixture and stir well.

Then pour into the cheese paste and mix well together.

Remove the molds from the refrigerator, pour the cheese paste into the molds, shake the table twice to ventilate, and then put them into the refrigerator until solidified.

After the cheese has solidified, make the mirrors last. Dissolve the fish glue in cold water and set aside.

Cut the yellow peaches into even slices.

After the cheese is partially solidified, remove it and place the sliced peaches in an even circle on top of the cheese.

Melt the fish gelatin powder in hot water and then pour it into the peach water and mix well.

Lastly, pour the mirror water onto a spatula and let the mirror gently run down naturally. The mirror liquid will be as high as the yellow peaches, so let it rest for a while and then slowly transfer it to the refrigerator until the mirror solidifies.

After the mirror is solidified, take it out, put a bowl or cup under the mold, and use a blowtorch around the perimeter to heat it up. (I used a hair dryer to blow an even circle, do not keep blowing in one place, it will melt.)

Gently remove the mold downward to finish demolding.

Decorate the molds as you wish, and enjoy.
