Fire-roasted donkey meat
It was originally a traditional food in Changfeng Town, Renqiu. It started in the late Qing Dynasty and became famous in the early years of the Republic of China. There is a temple fair in Changfeng Town every April. At that time, thousands of faithful men and women go to the "Grandma Temple" (i.e. Changfeng Wuliang Pavilion) to burn incense and make wishes to attend the temple fair. There are also merchants and artists from far and near who come to the temple fair to do business, tell stories and perform performances, which is very lively. Many temple fairgoers were hungry and bought donkey meat, which is crispy on the outside and tender on the inside. It is crispy, fragrant and delicious, oily but not greasy, and has a unique taste, so it is very popular. Over time, "Changfeng Fire-roasted Donkey Meat" became more and more famous, and it has been a favorite delicacy for more than a hundred years. Now, Changfeng Donkey Meat Shao Shao Restaurant in Renqiu City is located in various neighborhoods, and most of them are crowded with customers.
Changfeng Fire has its own unique method. First, make the hard surface, then apply oil, and then fold it into an oblate shape about the size of a tea bowl, with a core of thin multi-layered skin. Some are printed with circular patterns on the outer skin. After forming, the outer skin is cooked in a cake pan, and then grilled in a charcoal stove. Then use a knife to cut it open and add thinly sliced ??donkey meat, intestines, and braised pork. It tastes crispy, fragrant, and not greasy.
